Butterhorns with My Mom!

  • Butterhorns have been a tradition in my family for years. They have a classic, slightly sweet, buttery dinner roll flavor that instantly gives me cozy vibes.

    INGREDIENTS
    1 cup scalded milk
    1/2 cup butter, room temperature
    1/2 cup sugar
    1 tsp salt
    2 1/4 tsp instant active dry yeast
    3 eggs, beaten
    4-5 cups flour
    6 tbsp melted butter
    INSTRUCTIONS
    Place butter, sugar, and salt in the bowl of a stand mixer fitted with a dough hook.
    Scald milk on the stove. Once scalded, pour milk in the bowl with butter and sugar.
    Mix until butter is melted and sugar and salt are dissolved. Scrape the sides to ensure everything is dissolved.
    Add in beaten eggs.
    Measure and pour two cups flour into a bowl. Sprinkle yeast over the flour and mix to incorporate.
    Once mixed, add two more cups flour. Let the mixer knead the dough and begin to develop the gluten. After 4-5 minutes, check the dough. If it is sticking to the sides of the bowl and very tacky, you will need to add more flour.
    Once the dough clears the side of the mixing bowl, remove the dough and knead a few times by hand on a floured surface.
    Put dough in an oiled bowl to rise to double in size. Place a damp towel over the bowl to ensure the dough will not dry out. Put the bowl in a warm place to rise until doubled, about 1-2 hours.
    Once risen, cut dough in thirds. Shape a third into a ball and punch out air bubbles. Roll out each third of dough to a 15-inch circle (about 1/4-inch thick) on a well-floured surface.
    Brush with melted butter then cut into 12 triangles.
    Take one triangle, stretch end slightly, then roll up tightly. Pinch ends to create seal then place pinched end down on a parchment-lined baking sheet.
    Let the prepared butterhorns raise until they are about doubled in size (about 1 to 1 1/2 hours).
    Place into preheated 350°F oven and bake 8-15 minutes, switching racks and watching carefully to ensure they do not overbake.
    Remove from oven and brush with melted butter.

    I’ve made these so many times now. I love them so much. They are really good with spaghetti or lasagna too. When we do that I add chopped garlic, oregano and dried basil with the butter and spread on before rolling. Then when they get out of the oven spread melted butter and grated parm. Love your family recipes. Thank you for sharing them with us.

    They look so delicious 😋. I really enjoyed watching you and your Mom cook together. My mom isn’t good at sharing a kitchen or teaching recipes. I usually just stand back and follow the recipes. I will ask questions here or there. Then my daughter and I will make them with her 4 year old. It all works out in the end 🙌🏻💗

    I just went to my grandmothers recipie and it is the SAME!!! As a child I was known for eating 5 easily!!! I’m going to enjoy making these this weekend in Kansas City! My grandmother was known for her baking in Kentucky... why do we wait for the holidays to make and enjoy these !!!

    There is nothing better than homemade Butterhorns, my daughters (we never had sons) always ask me to bring them to family get-togethers. I knead the dough by hand instead of using the dough-hook. The first time I made Butterhorns was over 45 years ago, and that's when the tradition started for my family. Nowadays, I have to make several batches, so there are at least 2 or 3 per person (we all love them that much)! 2020 is the first year that I haven't made these delicious dinner rolls for any of the holidays. I hope you and your sweet mom have a safe, healthy, and Happy New Year! ~Margie

    Kaleb, please tell me you are working on publishing a cookbook.
    Your recipes are so good. I would probably leave the cookbook right on my kitchen table never to be put in the cookbook rack because I would read it everyday.

    Hahaha...you and your mom. I'm sure you have found this out in the two years since this video came out but...
    1.The granules of rapid-rise yeast are smaller than instant yeast granules.
    2.Rapid-rise yeast dissolves more quickly than the instant yeast because of the smaller granules.
    3.Some amount of ascorbic acid is added to instant yeast for preserving it; rapid-rise yeast does not have ascorbic acid.
    4.Rapid-rise yeast saves a lot of time because it makes the dough rise faster than instant yeast. Once the dough is kneaded, you can shape the dough for bread instead of waiting for it to rise as by instant yeast.
    5.Rapid-rise yeast cannot be substituted with any other yeast while instant yeast can be substituted with active dry yeast by just dissolving it in water first.
    6.The flavor of the final product made by using rapid-rise yeast is not as good as the product made by using instant yeast.
    7.Rapid-rise yeast is also called bread maker’s yeast; instant yeast is just baker’s yeast.
