Today I'm making an easy slow cooker chicken enchilada soup that's throw and go. If you need to leave for a few hours and come home to a warm meal, this is the ticket. Check it out.
Here's the RECIPE:
2-3 Chicken Breasts (I used 4-6 of the chicken tenders fromTJ's)
1/2 Chopped Onion
1 Can Of Corn
1 Can of Black Beans
1 Can of Fire Roasted Tomatoes
1 Small Can Roasted Green Chiles
6-8 Cups Chicken Broth (make sure all ingredients are fully covered with plenty of liquid above it)
1 tsp Cumin
Salt & Pepper to taste

Hey Rachel! I was subscribed back when you first shared this recipe on your channel and it’s actually what finally convinced me to buy my first slow cooker (which is still going strong). I made this soup immediately and it became a favorite in our family! We have made it tons of times since and again very recently.

I need more cooking inspiration. My daughter will be at school from 7.45 a.m. to 9 p.m. for cheer and musical rehearsal after that for the next few months, twice a week. I need good food waiting for me to drop off for dinner.

I like the Cinnamon French Toast bake, with bourbon bacon crumble. Like French toast, but you bake it. Soak bacon in alcohol, crumble. Perfect for lazy foodies (like me). ❤
Not sure if palm like coconut, but if you like coconut 🥥 🌴 , harmless harvest (prefer that brand over TJ's due to commitment to fair trade) coconut smoothie is absolutely delicious wonderful amazing highly highly recommend. 🥥 🌴
