    Simple recipe for Matar Mandi:
    Ingredients:
    1 cup basmati rice
    1 cup green peas
    1 large onion, finely chopped
    2 tomatoes, finely chopped
    1/2 cup yogurt
    2 cloves garlic, minced
    1-inch ginger, grated
    1 green chili, chopped
    1 teaspoon cumin seeds
    1 teaspoon garam masala
    1/2 teaspoon turmeric powder
    1/2 teaspoon red chili powder
    2 tablespoons ghee clarified butter
    Salt to taste
    Fresh coriander leaves for garnish
    Instructions:
Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for about 30 minutes.
In a pan, heat ghee over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown. Add minced garlic, grated ginger, and chopped green chili. Sauté for another minute.
Add chopped tomatoes and cook until they become soft and the oil starts to separate.
Stir in turmeric powder, red chili powder, and garam masala. Cook for a minute to let the spices release their flavors.
Add green peas and yogurt. Mix well and cook for a few minutes until peas are partially cooked.
Drain the soaked rice and add it to the pan. Stir gently to coat the rice with the mixture.
Add 2 cups of water and salt to taste. Bring it to a boil, then reduce the heat to low. Cover the pan and let it simmer until the rice is cooked and the water is absorbed.
Once the rice is cooked, fluff it with a fork and let it rest for a few minutes.
Garnish with fresh coriander leaves and serve hot.
    Presentation:
Serve Matar Mandi on a platter or individual plates.
Garnish with additional fresh coriander leaves for a vibrant touch.
You can accompany it with raita (yogurt with spices) or a side salad for a complete meal.
