Oh yes! There is wonderfull 70.3 triathlon on Croatian islands Cres and Losinj. Start from ferry, than beautiful bike on island ridge, and run by the sea...unfortunately canceled due covid 19. hopefully next year...
I would have recommended the inferno triathlon ending high up at schilthorn at 3000m You start with 3.1km of swimming, then roadbike100km +2000m, then mountain bike for 30km with +1200m and you finish with 25km with 2000m elevation of trail running All of that within an epic swiss landscape
I have several friends who have done the Coast to Coast - they recommend you do the 2 day version for first timers - it starts on the West coast (not East) by the way :) We also have "Kiwiman" which is mountain themed - swim 4km, then it bikes around and up and down Mt Taranaki in the North Island "The bike course is approx 188 km long and has 3000 height meters of climbing" - finally the run 42km starts off flat then straight up Mt Taranaki 1200m !! Craziness.
The "0-3000" (literally 0m to +3000m elevation) is a race which began in 2019 in Reunion Island (a French Island in the Indian Ocean). 1.5 km swim; 45 km ride (with 2000m positive elevation gain) into the mountains, and a 7.5km trail run (with 1000m positive elevation gain). It is a race from sea to the summit of the highest peak in Reunion Island in a beautiful landscape. ThorXtri; hardest swim in Xtri in Lysefjord, most epic start to a bike section in Xtri and then a marathon along the coast. Also, Tripp Trapp Triathlon in Norway - Kayak 25km, climb the Flørli staircase (longest wooden staircase in europe, 4444 steps, 750m up in 1km) 12km trail run in the mountain tops, finish with 30km bike back to the start area. Awesome event.

My first and only triathlon was the Craggy Island! Loved it. My next triathlon will be the X-Adventure in Western Australia, next year and 10 years after my first!
Sea to Summit Tri in northeast US. 1.5 Swim in tidal river then a "choose your course" bike around 90ish miles then a "short" hike up Mount Washington.
I wish there were more Canoe/Kayak triathlon events. With lots of training, I may one day advance to be a mediocre swimmer, something I have already achieved on a bike and as a runner. Alas, this restricts me to sprint events with an indoor swim. I can, however, handle a canoe, although grade 2 rapids are about my limit. As a mountaineer that dabbles in other disciplines, a paddle, MTB or CX, Trail Run event would be the dream. It might not be a traditional triathlon, but it is three disciplines with one involving water and another with self propelled wheels, so close enough.
If you’re in the UK, there are SUP-Bike-Run events & RatRace host a Kayak/MTB/Trail Run challenge at Glanusk. I agree though more triathlons with kayak rather than swim would be great
This has whetted my appetite! Definitely needs a follow up! How about a focus on local triathlons? Those smaller events that have been able to operate this year? Check out Active Training World 😁
Can’t remember if you have covered the Triathlon X events based in the uk Lake District before?! Serious steepness...beautiful scenery...or if the weather is bad, utterly painful! 😳
Check out the Survival of Shawangunks Triathlon near New Paltz, NY. I did it for the first time this year as a bucket list item. Unusual format and great scenery. Fantastic! (Great videos on RUclips of it).

As a supporter, ThorXtri has been my favourite race. The terrain is just epic.

Cover the inferno triathlon in Switzerland. It’s a really cool and scenic triathlon which is also very hilly
Try the Snowman in north Wales, but be warned you'll also need to carry an emergency suvival pack but outstanding scenery
In the middle of North America (North Dakota) is the Wilderman. Your choice of Ironman or a long half Ironman distance. A low key adventure triathlon.
