We use it to repair ovens and mixing pits at a aluminum casting plant. Its the only way to efficiently go inside the pit and repair the broken brick/block/old concrete.

Yes, it can be done. By adding water proofing admixture and if possible hydrophobic cement inclusion is more advantageous.

it shouldn't have altered IST and FST as its mentioned shotcrete has no special properties compared to normal concrete.

It depends a lot on type of mixture. It depends not only on accelerators but also on % of cement, water and aggregates. In 1 hour you can reach 1MPa

I like gunite, shotcrete is messy and can be hard work.
