  • Are you ready for an old-fashioned treat your family will love? This week, Dave shows you how to make Peanut Brittle at home. It's crunchy and nutty, and so easy to make. You're going to love it!
    Peanut Brittle
    2 cups sugar
    1 cup light corn syrup
    ½ cup water
    2 cups salted peanuts
    2 Tbsp butter
    1½ tsp baking soda
    1½ tsp vanilla
    • Line a sheet pan with parchment paper or a silicone mat. Set aside.
    • Measure out all ingredients ahead of time and have them ready.
    • In a medium saucepan over medium heat, stir together the sugar and water. Add in the corn syrup. Slowly bring the mixture to a boil over medium heat, stirring occasionally.
    • Attach a candy thermometer to the side of the pan. Don’t let it touch the bottom.
    • Cook the syrup until it reaches 250°F.
    • Add in the peanuts and stir the mixture constantly until it reaches 300°F.
    • At that point, remove the pan from the heat. Immediately stir in the butter, baking soda and vanilla. The syrup will foam and change texture.
    • Carefully pour the hot liquid onto the prepared pan and use a knife or spoon to quickly spread it into an even layer.
    • Allow to cool completely (30-45 minutes) then break it apart. Store in an airtight container.

Looks great. sub the water for your favorite beer and add in maybe 1/4 to 1/2 teaspoon of cayenne pepper. Now I want to make some tomorrow. If you have wooden spoon to stir the pot with and a good silicone spatula, they will be some of your best friends when making this.
