How To Use a Waterbath Canner

- This is a separate video on how to use a waterbath canner. It's really easy and means you can make and keep so many yummy jams, jellies, marmalades, etc.
Here's the equipment I find useful:
Waterbath Canner Starter Set - amzn.to/1veExnU
Half Pint Jars - amzn.to/1tGft3L
Oxo Ladle - amzn.to/1FLqkln
How To:
- wash jars and lids with hot and soapy water and rinse well.
- to sterilize jars, place jars in canner with just simmering water. Leave the jars in there until ready to use.
- warm lids (do not boil) in smaller pan.
- remove jam, jelly, etc. from heat and ladle into hot jars. Fill jars according to your recipe.
- make sure there’s no jam on the rim of the jars that could affect the seal. Clean with a damp cloth if needed.
- place lids on top of jars and screw on bands until finger tight.
- place jars in canner and lower into water. Make sure there’s at least 1-2 inches of water over the top of the jars. Bring water to a boil and process jars according to your recipe. Use the following chart to adjust water canning times for different altitudes:
Altitude (feet) Increase processing time
1001 - 3000 5 minutes
3001 - 6000 10 minutes
6001 - 8000 15 minutes
8001 - 10000 20 minutes
- turn off heat, remove lid and allow jars to sit for 5 min.
- remove jars from water and place on a towel for at least 12 hrs. During this time you’ll hear each of the lids pop as they seal.
- check the jars have sealed properly - they shouldn’t move up and down when you press in the middle of the lid. If a jar hasn’t sealed, you can refrigerate it and eat it or you can process the jar again using a new lid.
- keep processed jars in a cool, dry and dark place.

Thank you, I feel like my life has come full circle, here I am finally learning to water bath can. IU have often thought about it but been too intimidated to try on my own. I have been freezing and dehydrating, cold area storing (my basement currently gets way too hot to use for storage, but the back wall of a seldom used walk in closet I found stays 45-50*) fruits and veggies for years.

Hey Mrs Goose.
Just watched your video, and in one of your replies, you mentioned that you cannot can meat. I have in the past canned venison and beef using the boil bath method. I followed a method used by my grandmother, and everything seemed to work well, with the exception that with a boil bath, it takes about 2-3 hours, I only add some chopped onions,garlic and salt and pepper spread on top of the meat. I don’t add any water to the jar itself ,I start out by filling my canner pot so there is one to two inches of water over the top of the lids and immerse my jars into the cage and boil hard for one to two hours. I keep checking the bottles, and when I see the juices from the meat starting to boil, I just let it boil for 2-3 hours. When I take the jars out of the water, I immediately hear the popping sound which generally indicate the jars have sealed. One other thing I do is that when I put the meat in the jars, I screw them on only hand tight and then back it off a quarter of a turn.
I have never had a problem canning meat this way. My big question is, have I been tempting fate every time I can. Any comments would be appreciated.

The jar wrench, first tool you showed, is the best way to remove the lids when you open the jars to use. There is no damage to the lid or jar.

It is recommended that you remove bands because leaving bands on can cause a false seal or keep you from recongnizing a broken seal in storage.

Thanks for the video. It was very thorough and helpful. You mentioned you were going to refrigerate the last jar because you ran out of jam to fill it up like the rest. Is there a reason for this? Will the ability to seal be impacted by the amount of jam in the jar?

When putting the sealed lid on the jar when Jam is done and about to fill jars, do you need to wipe off the water from the warm water bath?

I have the same size canner that you are using, however, I have a glass top stove and the instructions don't recommend this for this canner. What can I use?
Is that canning pot safe for all stove tops? Mine is a glass top and I read somewhere that the stove top and the pot are not compatible. Love your videos.

Unfortunately, you're correct, this canner is not suitable for glass stovetops. Boo!
If you're having trouble finding something that works, I would suggest maybe that you find a large stockpot (or you may have one already) that does work on glass first. Then you can buy a kit that has a wire rack to fit your stockpot and that has all the other tools too. I think I've also seen just the wire rack too. I guess it's just a matter of matching the stockpot size to the rack size.

Hi thanks for the video. When I am ready to have the jam, how do I keep the lid on as I'm going thru the jar of jam if the ring has been removed?
You can put the ring back over the lid each time.
so how long would you boil it for chili.. making paleo chili for my daughter to take back to university with her or even if I could make a stew so she can still have a home cooked meal

Is that a glass top stove? I was considering getting that same canner.
I wanted to water bath can vegetable soup. Even when I typed in water bath canning or water bath canning vegetable soup it would either show a pressure canning process video or they would only say follow the recipe. What recipe?Any suggestions on where to go for recipes/timings for things to water bath can?

How long will these jars preserve food, like a month ?

The recipe you're following should tell you how long you need to process the jars for.

How do you reprocess jam if it did not set.? More pectin/surejell more sugar...or both

It really depends on the recipe you're following for the actual processing time. The time is also based on the recipe itself and how long your jam takes to cook.

Hi Artemis. I've never canned tomatoes! I know that you can us a waterbath canner, but, as tomatoes are a low-acid food, a pressure canner works better (less spoilage). If you're using a waterbath canner, you need to process the filled jars for 40-45min, so much longer than jams, jellies and marmalades. Do you use the porcelain canner on a gas stove top?
This is an enameled steel canner and I use it on a gas stove.
I noticed rust on your rack. I have no issue putting jars with sealer lids on into that water. But to expose them to that rust in the water from the jar rack would bother me too much.
How about for cooked fish?how many minutes?
For canning meat you need to use a pressure canner.

Like your channel, but I've made jam for years, and never waterbathed anything. And I know I'm not the only one....I live in the Netherlands, and Ive seen jammaking the way I do in the UK as well. No canning at all. Just put the readymade jam, hot from the stove, into a jar, close the lid tightly and wait untill they are cooled. I always can hear a plop, when the jar becomes vacuum. By itself. And it lasts for a long time (even after 2 years, it was still fine!
I can imagine water bathing for meat and vegetables, but for jam it seems (at least to me, with all respect) unnessesary...

I want to "re-can" tomatoes with fresh ingredients. How would that work don't want to over cook tomatoes.

What if you only have a glass cooktop??
I think the preserving pot should work with a glass cooktop. It should say on it if it doesn't.
