Queen of Crisps - Strawberry Rhubarb

  • This is an old time country recipe that never gets old. It’s a dessert as old as time with good reason, it’s absolutely delicious. Enjoy.
    Filling
    900g Rhubarb cut into 1/2 inch slices
    450g Strawberry
    1 1/4 Cup sugar divided in half
    Use half the sugar on the rhubarb and half on the strawberry. Mix and let marinate for ten minutes, then combine all together.
    3 TBlsp Cornstarch
    2Tsp Lemon Juice
    1Tsp Vanilla Extract
    Topping
    1 Stick Salted Butter (115g)
    1 1/2 Cup Brown Sugar
    1 1/2 Cups All Purpose Flour
    1 1/4 Cups Quick Cooking Rolled Oats
    3 Tblsp Vegetable Oil
    1 1/2 Tsp Cinnamon
    3/4 Tsp Kosher Salt
    Bake in 350F oven for 1 hour
    Let cool for 15 minutes
    Serve warm with vanilla ice cream
    Serving dish was 8”x11”

    My Mom used to make this from a Rhubarb plant that grew wild in our back alley. Crazy good
