These look delicious and, you're right, totally perfect for Christmas and the holiday season! The next time you make these, you might want to not only choose a different variety of apple (a cooking apple vs. an "eating fresh" apple), but also peel some of the apple peel off, so the heat can get into the center of the apple more easily. But this version looks like it was a success, anyway!

My wife and I have had these before. It's really better for you to just visually inspect the apples every so often to see how soft they've gotten. Just take them out at whatever softness you prefer. I like them to be pretty well done before eating. Also your results may vary depending on the breed of apple, I'm not sure how that impacts the recipe. All I know is it's never been 30 minutes for us.

Isn’t amazing how long an “Ohnosecond” seems to last? You know… that measurement of time waiting between when you think you have sliced your hand open and realizing you’re OK.

she used a granny smith apple. i do this by cutting the top off and coring it but not all the way through. then add caramel squares and some butter. then place the top back on and bake at 350 for 20-40 minutes or until you can squeeze the sides, and it gives slightly. let cool for 5-10 minutes before eating.

I live in Moldova, have a child and bake apples all the time. I use Golden variety and don't add butter or surar, it's plenty sweet and rich as is. I don't use corer, just slice apples in half lengthwise and get rid of the middle with the knife, it bakes faster in halves and juices don't spill as much

i put sultanas or berries in the core with the sugar/cinnamon and maybe a drop or few of Amaretto liquor

The apples Clara used didn't look like baking apples, they also appeared to be smaller than the ones you used. I have Clara's cookbook, she specifies 8 tablespoons of sugar and 2 heaping teaspoons of cinnamon I'd probably just use a tablespoon.
I hope Justin feels better soon.
