Only way to explain the other versions from the other F4 movies.
Having them from another universe is a great idea, in my opinion. They won't be tied down to the continuity of the main universe so they can literally do whatever they want. Questions like "Where were they during endgame?" won't be asked, and Galactus can be the villain of the movie and destroy the entire universe if they want to because, of course, it's not the main MCU universe. It gives Matt Shackman all the creative freedom he needs with the setting of his Fantastic Four movie, so this is a great idea, in my opinion! 🙌🏽
but questions like why dont they wanna go home will. it sucks. should have come from 616 but been away for trapped for years.

It all makes sense to me. They arrive in the modern 616 and are like "Wow your tech is so advanced, but so simple even a baby (Nathaniel) could use it!"
Then Reed patents and sells his transportation tech and becomes a billionaire overnight.
How else do the Avengers/X-Men use Genosha as their base if they can't teleport wherever they want instantly?

2:39 the reference to be precise was in relation to The Beatles who were chart toppers all throughout the 60s all over the world and regularly were referred to as the Fab 4 or Fabulous 4.

Dr Strange was talking about The Beatles; they are known as the Fab Four! Perhaps not everyone around the world is aware that 'fab' is 60's slang for 'fabulous'. It is then a short hop from Fabulous Four to Fantastic Four.
Actually there was a band named fantastic four in the 60’s so maybe dr strange was referring to them
There was actually a singing group named The Fantastic Four that charted in 1967 #6 on the Billboard R&B

In the MCU Fantastic Four movie franchise, I want to see Rama-Tut in Egypt, Mole Man underground, Namor in love with Sue, Ben with Alicia and the Puppet Master, Johnny with Frankie Raye, and Reed inching his way closer to becoming the Maker. Franklin and his sister can be introduced after the first film.
Been waiting for multiverse impacts to come into play. This saga has been so slow as we haven’t seen enough of that and it’s finally time to get going on it.

It actually could be that in the 616, the "Fantastic Four" was like a Partridge Family style pop group in the 60s. That'd be a funny way of explaining that Strange line.
So excited for this! I did enjoy the older movies for what they were but I feel like the MCU will do even better than those films at portraying the powers, and obviously it will be GREAT to finally see them interact with our other heroes for the first time when it happens!
That last part of your thoughts them being in another time is best story on why they were not in the 616. Can't wait for FF

On a real world historical note, Cosmic Background Radiation was discovered in the mid 60's so they could tie in FF being sent out to investigate and maybe some cosmic shenanigans occur. CBR has been covered before in the MCU so that's my theory...
