My ocd is screaming ! Clean up the mess on concrete floor 😊
It is all insulation scraps from the spray in insulation and remember the entire floor has been insulated months ago. Not saying there isn’t some scraps but vast majority is insulation
It’s looking like one of those situations where you cut it off 3 times and it’s still too short. As long as it’s plumb you’re doing good, or at good enough for who it’s for.

It makes excellent firewood! In this case, if that castle ever does go up it is going to burn cherry red on the turret with all that trash between the joist.

Expanding foam is not structural
No floor is 💯 level!

I saw Matthew first on Mike Simons (AKA-"Dirt Perfect" channel), he is always a nice and hard working person.
When he is doing projects, like the Castle rebuild, he never cleans up the site to make the job easier and is comfortable working in in a chaotic environment (Which drives me nuts).
Sometimes his Family will show up and clean his work sites because Mat never does. So he will never clean the mess up and will just lay the flooring over top, and move on to the next project.
Another awesome step completed. As you stated Lucas is certainly growing in cofidence and ability you are a awesome teacher Matt RESPECT for your patience.

This episode has been a joy to watch as I'm finally home from a week in the hospital laying on my couch recovering from stomach surgery.
I can't wait to see the flooring going down making it much safer to finish off the tower interior.
It's going to be awesome to hang out up there with that beautiful view of the river.

Have you considered putting in a fire suppression system (fire sprinklers in the castle) before the sheetrock goes on? One would think a nearby company would give you a sweet deal for the promotion.
I have thought about it.
I am guessing you are leaving all the stuff in the floor joist area until you are ready to cover it up, ie that way you only have to clean it out once vs a lot. Once you have it all square, it will not look the same at all :)
I was thinking that if he is willing to cut the floor joist so that they sit snug to the uneven joist below, why not just cut strips to level the existing floor (Or sister to)! Then you would not worry about banging your head because you raised the floor (Or maybe you already have banged your head🤣🤣)! I'm guessing that the existing floor is beyond what could be fixed with leveling cement!

Floor is already insulated. What you see down there is insulation scraps. Maybe a few pieces of wood but minimal

Well the laser I use creates a level line to horizontal planes so I assume just level 😂🤣😂🤣
