In case it helps: if your bananas are too under ripe, mash an egg yolk into them and wait half an hour. The enzymes will convert the starches to sugar, and they become ideal for baking.
I learned this from America's Test Kitchen and it's always worked for me.
I always enjoy Mrs. Shrimp's reactions. So understated, yet enthusiastic.
I agree, from a lot of people „it’s alright” would probably sound like the food sucks, but Jenny clearly really likes these pancakes, which is nice. Always appreciate a guest appearance from Jenny.
It almost sounds like she's surprised it tastes good. I wonder how many failed attempts she's endured that didn't make it on this channel. LOL! Regardless, her honest reactions are refreshing to hear.

Every collab with Babatunde is a great one, seeing what you two come up with to put your own twists on recipes is always a great time. It's awesome seeing his channel grow, and seeing the many quality of life improvements he's been able to add to his home. He started with so little, but he loves cooking and now he has a proper kitchen to experiment and learn new recipes.
EDIT: You and Jenny are the most wholesome couple I think I've ever seen, I envy you, amazing wife, hilarious doggo, and an incredible cottage.

SAME HERE! Though I once made the mistake of having one TOO under ripe. They have a very chalky texture.
I have fond memories of eating whatever banana my Grandfather would have in his kitchen, and they were often still a little green on the tops. To this day, I prefer them this way. When they go farther, I either share them or freeze them for later for smoothies or baking.
yea i always liked them a bit green. firmer, less sweet, a slight bit of sourness, and a fresher flavor. but too green and it’s inedible without cooking it

I've found that when making mixes which are difficult to flip, it's best to start on a very low heat to firm the entire thing and then turn it up high just before the flip to prevent sticking.

Hi, Mr. Shrimp! It's nice that you're mentioning Babatunde. Banana Oat pancakes sounded very familiar to me as I have tasted it many, many years and moons ago on a culture evening. It was delicious. Now I need to make this for tomorrow's breakfast.

The slightly alcoholic, fermented overripe bananas are actually my favorite 😅 for baking ofc, not eating out of hand.
when I make banana muffins or bread I use really ripe ones. They make the best ones.
Yep, they have a stronger banana flavour, are sweeter and thier mushy consistency combines better into other baking ingredients. Like you said though, they're a touch too overly strong when it comes to eating one normally.

I also like to use the very over-ripe ones for making banana bread. I also like to add crunchy peanut butter to the mix. What could be better than peanut butter and banana!
My grandmother always said to use the super dark, alcohol-ish bananas in baked goods like bread, muffins and such. She said it made a better flavor.
This is such an easy recipe and a quick way to use overripe bananas. Learned from a friend, when her kid was a toddler (so 2017ish, where does the time go?) and have being making these since then even without a toddler.

I have a mixed flock of both rare breed and commercial egg layers. All their yolks no matter what I feed them ( they are free range) are a deep yellow/orange colour!
As a gluten-free person (so sad) these kinds of "pan-fake" recipes and variations are very welcome, and I've even come to prefer them over regular pancakes. And yes, there are always a few duds in the beginning of pancake making. We call them sacrificial pancakes.
I highly recommend oats in waffle-shape too, they can be a bit finnicky to dial in in your waffle maker but well worth it.

But in any case....I think, I'll have banana pancakes for breakfast, tomorrow!
Isn't banana bread always made with brown bananas? Isn't it a way to use up bananas that have gone off?
I was taught the browner the better. Or else use a dash of banana extract.
@LoriLindley-eu3qz When my wife makes banana bread, it feels like 90% banana with a dash of flour. Haha and yes, our store sells them in bundles at extreme discount. Like, 4 browns for the price of one banana.

Yep, over-ripe brown bananas have a stronger banana flavour, are sweeter and caramelise better. Plus, they combine better with the other ingredients. That brown banana he had at least looked pretty much perfect when it comes to baking.
I would avoid eating them straight like that though, as they can be a little too strong and over powering.

About 10 years ago Jamie Oliver made some noise with a similar recipe, so I gave it a try. What I learned: butter makes things easier, a bit of yeast keeps the pancakes together, and overripe bananas work better than the normal kind you’d eat fresh. But like you I still had to battle with cooking temp.

My husband loves some chickpeas with his lunch salad - and I use the canned kind!
My teenage son loves pancakes and apple sauce coming home from school! Growing quite fast now he can easily finish 3 eggs/6 Tblsp flour+milk!
Finally I tried to keep the drainage! And I discovered that about half of that *fancily called aquafava now* drainage compensates for a whole egg of those three!💡And it keeps in the fridge!
Normally that would have gone down the drain, but our son loved the consistency of his pan cakes without knowing!
Would you think that keeping the bean drainage of your cannelini beans - which is also some kind of aquafava! - was worth saving?

So, as it turns out, I'm quite an opposite to Mr. Shrimp: I absolutely love really green bananas and slightly burned pancakes :) That first one did not look burned enough for me.

I make the batter for these in the food processor. It breaks down the oats for a better batter; holds together better while frying. Fry in butter for more flavour.

Great video! I have some ripe bananas and I am gonna try this. The nutmeg, chili, ginger combo sounds so good.
That last one is how i prefer bananas, the problem is keeping them firm and unbruised, i find that when i buy them i eat them all before they are at that perfect stage and if i get given bananas because people know i like ripe/overripe banana there usually mushy and bruised to high hell, because they get thrown around the fruit bowl, i have found that if i buy TWO packets of bananas then leave one in a pan cupboard then by the time ive gone through the first lot and remembered the second they are all perfect, over ripe, firm, delicious, like you said almost alcoholic bananas 🍌then i have 1.5 days to eat them haha 😂

I like almost-green bananas. They sometimes give me a bananary stomachache due to how unripe they are, but I never learn my lesson.

I make these to change things up on occasion. I agree with your assessment.
In the US we use bananas that are as black as possible for banana bread. The slightly black one you had was just getting ready for baking, imo. But, of course it's all you preference. Just sharing a difference 😊

You mentioned Esters. I just remembered from school that they can be made by adding acids to alcohols eg Nitric Acid and Ethyl Alcohol produces… vivid apple scents.
To lighten your pancakes and keep to three ingredients, how about oat milk? Perhaps whizz the oats to a fine flour first of all 🤔

When making pancakes, I always use a lid (preferably glass so you can see what's going on). It helps to cook the pancake all the way through, making it less likely to break when flipping, burning on the bottom, or being undercooked in the middle.

I used cracked corn for orange yolks.Those funky bananas make the best banana bread.
brown bananas are different in smell to rotting bananas, but both can be described as alcoholic, which i think is what is bringing the dissidents out of the woodwork. Morris (which is what we call that particular breed of banana) aren't the best of bananas, either in texture or flavor. unfortunately, the ones that are good don't ship well.
Yeah, this one smelt like alcohol. But also like vinegar and earth.

I quite like St.Ewe's Rich Yolk eggs. They may not have such dark yolks but they taste much richer than Clarence Court imho

What a coincidence, I tried making some banana pancakes earlier this week and they were such a disaster that I threw them out in the trash immediately. I think I'll stick with the regular pancakes from now on, but I was happy to at least have tried making these.
Chili flakes always benefit from a bit of time to rehydrate - and continue to enhance their heat as they rehydrate many hours later. Left over pancakes are a rarity but I wonder if they will be a dangerous midnight snack haha

I used to use oats instead of flour, but I soaked the oats in milk overnight, then just added the eggs and a bit more milk. Not sure why I stopped. They were good.
I like marmalade with bananas but that ginger syrup look very good

Not sure. I've used bananas in baking when they were translucent and semiliquid inside, but this was a different kind of gone.

I was just thinking I want to make banana pancakes for breakfast, do you think this pancake batter would last a day or 2 in the fridge? Or would it affect to oats
I imagine it would stand as well as any other egg-based batter. The oats are likely to soak up more moisture over time, so it might need to be loosened with a little bit of milk or something.
I'm not absolutely sure I would keep it 2 days. Overnight seems fine. I suppose you could just make all the pancakes and keep them that way - then reheat those in a pan.

@AtomicShrimp I made these Pancakes today, with my own alterations, I used a stick blender to blitz some of the oats, this seemed to help the structure of the pancake, I also added 1/2 cup more oats and a splash of milk, i flavoured mine with cinnamon and vanilla and topped them with honey and greek yogurt.
The result was something between banana cake and banana Porridge, it was delicious
I do love a good brown banana. I can imagine that alocohol smell now and I will definitely still eat them at that point.

That first banana looked like 50% of the bananas that get eaten at my house. My mum likes a bit of banana on her cereal, but she eats so little that by the time she's finished one, the next one is often too far gone. Some times she eats it any way, (waste not want not), other times she'll save it for a banana cake that never gets made so it eventually gets chucked just before liquification.😋

Mr Shrimp, I cannot believe that you discarded that first banana. Very very over ripe fermented smelling ones make fantasic milkshakes, add tumeric for taste and colour. Authentic banana natural flavoured.

The first pancake is usually a flop because people don’t let the batter sit so the baking powder/soda can activate.
That last banana was a pancake banana.
One over ripe banana, one egg, one tablespoon peanut butter, two tsp flour mixed with a pinch of baking powder, spice optional, mix - mash - fry

Very surprised Mr shrimp tossed the overripe banana. I would eat that with little question and definitely cook with it. Rarely cook with anything less ripe. Starts to go brown from the middle. As long as the thing isn't liquidy it's okay in my book. Scent is a decent check though, maybe mine haven't fermented
