I haven't had fried snapper since I was a young boy in Illinois, when my Grandad was still alive. I'm retired in Florida now..after watching this it brought back so many memories.....I'm getting some if I get the chance, and yes it is very GOOD as I recall. Thanks J.
i love snapping turtle, i started catching them with my grandpa and uncle since i was 6-7. i was taught to process them just like you did, keeping them for a few days in a stock tank or cooler is the key. just a reminder to everyone some states have restriction on turtles. in wisconsin, our season is from july 15 to nov 30 and they have a slot size, meaning you can only keep them 12 to 16 inches, and have a max of 3 in your possesion, you also need a fishing, or small game license.
My father said the same as far as the taste, depending on the type of turtle. He also said that the meat was like eating a chicken gizzard. A bit tough and chewy but still really good.

We raised meat rabbits for years back in NC, canned 'em too, and now were just waiting for the heat to breakto replenish. Rabbit tastes like ... RABBIT!

John, love the video. Hater's are gonna hate and there's folks who simply don't have a clue through no fault of their own. Seems there's less & less opportunity for people to get back to their roots. To get their hands dirty in a garden, to smell wet chicken feathers and learning to check what's on their shoes before going back into the house. To eat fresh fruit straight from the plant that produced it. Nor to experience Silver Queen sweet corn on the cob, 10 minutes from the stalk. Can't stress enough, how helpful your videos are (can be) to the latter group of folks mentioned. We never know when hard times are gonna strike. Whether in our personal lives or a much larger situation. I'm sure with every how-to video you do, that you do help someone(s) to be a little more self-reliant and independent. While they may not remember all the details of xyz, you've planted a seed. And, at the same time, you can still teach old timers, like me, another trick or two. Thank you for that, my friend. My granddaddy would put them in a rain barrel and feed them leftover bread and biscuits for several days. He would change the water every few days until it stayed clear. Grandma's fried turtle was the best and one of the things a miss the most. As grandkids we would always go bump the barrel to see if there were any turtles in it. :-)
I wish my daddy had lived to see youtube, he would have loved all these videos. We lived on a lake way out in the woods and we ate catfish, perch, bass, and crappie all the time, but he was always thinking of other ways to provide, hundreds of snapping turtles lived in that lake and the one and only time he decided to clean one, it was pregnant, all these orange looking globs were coming out of it and it just turned him off that idea for awhile, LOL. He didn't live a whole lot longer after that, but I think we would have eaten turtle eventually!
I haven't had turtle for many years. Never heard of the nail trick either. We always fried ours as well but cut the meat into smaller chunks. Fried it all up and then put a little water in the pan and covered to steam a while. seems to finish cooking faster and more tender. With it all in smaller chunks you never knew which part you were getting but all was good. Great video and keep em coming.

A couple of days ago, my neighbor across the street started yelling for me to bring my big-ast gun and shoot a big-ast snapping turtle that was under her deck.I yelled back that you don't shoot a snapper, you chop it's head off! If it hadn't came out of the polluted creek behind her house I would have cleaned it out just like you did before dispatching it....and cooking it. YUM! Only thing is, YOU FORGOT THE GRAVY!!! LOL!!!!!

I've got 3 turtles to cook. have a few friends coming over Saturday. just wondering a couple things. first do I need to debone the meat? second can I just put a large dutch oven on a outdoor gas burner and just deep fry it?
Can you use cajun fish fry instead of flour? Never did this... Caught alot of snapping turtles.. . Never thought of eating them.. Always just cut my line.. Last one i caught was massive... We have alot of these and soft-shell turtles in the Rio Grande valley in central new mexico..

Just wondering..The lake here is full of turtles and the water is pretty clear, but should I go ahead and purge them anyway? As far as the squeemish types.. they don't seem to have a problem eating meat, but opposed to killing and cleaning? Let em eat it live and raw I guess.. I don't worry about them..

Hey John, way to go. Hubby and I prepped a snapper not too long ago. Meat is rather bland for the most part. We did not do the flushing in water stuff, why? because if you prepare meat correctly it doesn't taste bad proper technique is the key. It was however sort of stringy any suggestions?
I picked up a turtle on the highway the other day and put it in the back of my little pickup, I had a couple of tillers and other stuff in there. The next morning I went to get the turtle and put it in a barrel of fresh water and somehow it managed to make it's escape,,I see lots of dead ones on the road but seldom get to pick up a live one.. They aren't as hard to clean as one might think, I use a razor knife to skin them with.
MissouriOldTimer There's a beaver pond wetland a few hundred feet from our home. See them fairly frequently. Have rescued a from the highway & returned them to safer territory. Did my heart good to see a fellow stop the other day, take one out of the road & return him/her to the wet side. Sadly, we have some young folks (boom box crowd) that'll run over anything they see in the road. Hear sliding tires and another black snake, is dead, for example. Take to eat is fine. Senseless killing for the sake of it .....
Oldtimer Lee I totally agree , I never kill black snakes or any other snake unless it's a copper head or rattler although I have never seen a rattler in our part of the country, the ones most people call box turtles (we called them terrapins,) are in the roads a lot and I know some kill just for fun, I never want to hit one, when I was a kid my brother and I had 24 in a big wooden box and we dug worms every day for them and later we felt it wasn't right to have them caged up so we let every one of them go.
MissouriOldTimer Same here with snakes. The only ones we dispatch are poisonous ones that actually come into our yard. Too much risk to people & pets to allow them to remain. OTOH, we welcome black snakes around our place, as they help keep down the mice population. We have box turtles, too. Don't see them as often as we used to for some reason. Don't know if highway traffic or something else has taken its toll. Glad to hear that you & your brother released your collection. :-)

RAKRail well if I had to guess I would say it was about a 10lb turtle or so, I we got about 4 or 5 lbs of meat. Just a guess bro, there are not a whole lot of guts, but the skin and shell weigh quite a bit...........................................J
RAKRail jnull0 That's a small one. We had one in Clemson crossing Clemson Blvd from the lake to Chick Fil A. I guess he wanted a biscuit. Anyway, this sucker was about the size of a manhole cover. I was going to try to help him across the street but he got an attitude with me so I told him to be that way and got back in my car!

The snapping turtle must be cleaned out. Then cut the head off clear up as close as you can then attach the neck skin to a faucet. Use a steel ring that tightens around the faucet and neck tightly. Release the water pressure and the turtle skin will billow up until it is all blown up!!! It will push the feces out the butt too. Like a reverse ennima. Then clean as you normally do.
Now this is one meat that I have yet to try and I guess I never thought about em too much, but golly, seeing how much meat is on that sucker, when I find the chance I'm gonna have some for dinner one of these days.

I thought the deal with Turtle was it best in soups and stews.....I think you mentioned it in your video. Do you not eat that way and isnt it supposed to be the best meat for stews and gumbo? Also, thank you for video, I enjoyed it.
Great video - do you have one on deboning the meat? I've got one in freezer from late summer. Only advice I've been given is to boil it until you can pull meat off bones, but I think that assumes I'm making a stew. I'd like to keep options open.

When I was younger, I had a small alligator snapping turtle bite my finger, I couldn't imagine a grown one biting it.

Put molasses or pancake syurp in the salt, also pre boil deer meat in water and molasses or pancake syrup

He is a baby but still a good eating. Delicious stuff. Once you butcher one you will be a pro and you will actually try to get more of it.

The snapping turtle must be cleaned out. Then cut the head off clear up as close as you can then attach the neck skin to a faucet. Use a steel ring that tightens around the faucet and neck tightly. Release the water pressure and the turtle skin will billow up until it is all blown up!!! It will push the feces out the butt too. Like a reverse ennima. Then clean as you normally do.

Now this is one meat that I have yet to try and I guess I never thought about em too much, but golly, seeing how much meat is on that sucker, when I find the chance I'm gonna have some for dinner one of these days.

I thought the deal with Turtle was it best in soups and stews.....I think you mentioned it in your video. Do you not eat that way and isnt it supposed to be the best meat for stews and gumbo? Also, thank you for video, I enjoyed it.

Great video - do you have one on deboning the meat? I've got one in freezer from late summer. Only advice I've been given is to boil it until you can pull meat off bones, but I think that assumes I'm making a stew. I'd like to keep options open.
Honestly, I have never deboned one, we always cook them with the bone in....sorry, wish I could be more help....................J
