125 is 100% possible, 130 should be possible and I think 135 would be the absolute limit. It's possible to get 1600 dance, and if you build 95? statues that should mean ~130 knights can be made. Deleting all fletchers, church, joust, and fair gets you +2k gold at the end and I was already floating 3.7k at the end. I haven't tested what would happen if you did 7 mills, or even all bread and no fletchers. Trade should be lower but net gold, especially before 86, should be higher, which means you could get more early statues.
