Nice video. What is the maximum rise of your starter? Doubles only or it can, Triple if you give it more time? My stiff starter does not rise more than 200% (doubles) and i wonder if this is normal. Thanks for sharing this.

The stiffer the starter, the lower the % of the rise. This 100% hydration feed would triple or more given time. I've started feeding it at 70-80% (80 in winter) since that is close to the hydration of my dough. It will get to a little over double.
