    If meat sauces (jus) weren't rich and full bodied enough, there is jus gras (with fat). Usually the fat is removed when making a meat sauce. A jus gras keep some of all of the fat, or in some cases uses another type of fat such as duck fat for example. Just a little bit of jus gras takes your meat dish to a whole other level. This pairs with just about any type of meat except lamb.
