Sniper Duel doesn't actually require you to kill a skeleton; the game just checks that (1) a skeleton died after you attacked it, and that (2) you're more than 50 blocks away from it when it died. That's probably what happened there. If you listen closely, you can actually hear the skeletons attacking each other right after he died, and the one that he'd hit was likely already low, so that's how it died.
If a skeleton did the final blow, I don't think it would count. I could be wrong though. What could have happened is that one of his arrows got lodged in a block, and that block was somehow broken after he died (maybe a creeper did it, but there wasn't any creeper visible so idk)

the flying cow at 4:26 is because of how the fence hitbox works. fences have 1.5 block tall hitboxes so you cant jump over them, but it means that if something manages to get up on top of it they appear to be floating since fences are only visually 1 block tall

He was trying to get the advancement "Uneasy Alliance", which is when you kill a ghast in the overworld. The meta for this advancement is basically to pull the ghast to you in a specific way so you can kill it with TNT while in the overworld, so the ghast doesn't actually have to leave the nether. The mistake he made was that he didn't exit the nether portal once he entered the nether, and you can't go back into a portal you just came through without first stepping out of the portal
