Is this doable for upper level ESL students and does it work beyond sentence level with longer speech/text?

and dictogloss is a basic activity which is included in pre-service courses like CELTA

Yeah. Most activity sample videos shows an ideal classroom situation, no matter where you are in the world. Pick the smartest and most manageable class and film a video with them. The activities are not transferable to a class with more than 30 students in a classroom with bad acoustic and under-managed airflow system.

that´s obvious, that´s when you have to perzonalize the activity, use it as a base and master it to make it suitable for your class.

To be honest I wouldn't slow down to make the sentence more understandable, the point of the activity is to make the students aware of the features of connected speech, so they should be challenged as much as possible.

Obviously, that depends on the level of the class. Sentences get longer as they go up through the levels.
