    Nice recipe thank you for sharing..however I would prefer the duck to be steamed first to get rid of the rawness before addition of the flavorings..

      bubu joo Estes. Dishes like curry won't necessarily make you fat though. I'm nowhere near overweight and I eat curry almost every day. All the spices have amazing health benefits.

      I'm very sure that you don't use the coconut "WATER", but coconut "MILK", for cooking your duck.
      Coconut water, is for drinking, and the milk is for cooking; you'll have to grate the coconut, mixed with water, and then extract the milk for cooking.
      Coconut water, and coconut milk, are totally, two very different things!

    Hey! I love this video. Could you please tell me which brands of curry powder, geera and masala you use? Also, what is meant by "mixed masala"?

      Hi Hilary, we use Indi Curry Powder and Chief brand for the Geera and Mixed Masala.
      Mixed Masala is the same as Garam masala which is used mainly in meat dishes (So the Chief packet will say 'Garam Hot Masala') which is what I should have said in the video.(Sorry)
      The Garam Masala is a mix of Coriander, chillies , blackpepper, cinnamon, nutmeg and cloves.

    Cooking time take?

      It will only take 10 - 15 mins, from the time the pressure starts to whistle, check in 10 mins and average how much more time if needed. If needed it won't be more than 5 more mins.

    Ok so I finished a while ago but I have 3 little ones so I was busy with them the curry was a hit... I didn’t have broad leaf thyme so I just used fine leaf time I also used a buck and goat curry powder from chief same amount you guys said and I didn’t blend my eshallot/ or scallions as it’s called here I also blended 3/4 of my onion and chopped the other quarter and add it to boil and when I threw in the water as well as my peppers

      No we don't, there is no need to do that for Curries, other dishes, yes.

    You don't marinate your duck with none kind of seasoning before cooking? Just asking okay.

      No we do not marinate meat before CURRY, it makes no sense, it will overpower the curry with spices. When the curry is being chunkayed, that is more than enough to infuse the spices and seasonings into the meat.
      We season meats beforehand for different dishes but not curries.

    Hi guys! I don't know the name of this recipe but I had it at one of my Guyanese friends place back in high school. since then I'm looking for recipe....I really hope you can help me! it was provisions soup, it had fish (think it was fried first but not sure), and then it had Casava, edo, plantain, dumpling and I can't remember much else. does this sound like something you guys make? if yes, pleassssssse would you post a recipe for it? thank you, love all your cooking videos 👍👍

      🙂Yes you can, it is cooked the same way, but because Goat meat has a very strong (rank) taste even after washing, some people will add the raw meat only to a pan and let it release some juices and throw that out, then start cooking like the Duck.

      it's a chemical reaction with water when stored in the fridge, we use fresh garlic now.

      Hi Agnes, only pepper was added to the garlic while blending. Garlic turns blue or green when crushed or chopped due to sulphur compounds it contains. It is perfectly safe to consume.

      Yes it's cooked with the same ingredients, some people add a cinnamon stick to the beef curry as well.☺

      Yes it does, we took some off and left it on a few pieces . You can remove all of it, whatever you prefer.

      This is the Guyanese way. Different cultures, but taste great for both cultures I guess.
