I made my 1st lemon meringue pie with a homemade crust that year too (as well as many other great desserts).That was when we use to put the pie back into the oven so the meringue could toast. Sadly all of the recipes I had from that yr I lost yrs ago. She was an amazing teacher. She taught us baking, cooking and sewing. Wish I could go back in time because I had a blast...

You might (heavy emphasis on might) be able to use it for the crepes, but for the whipped frosting that's a no-go unfortunately. I'd say do a small test batch for the crepes as well, because I suspect almond milk won't provide the same properties for baking as regular milk.
