Pork Sisig - Kapampangan Style
Ingredients:
1. Wash/ Blanch
20 cups - water
2 tbsp - salt
5 pcs - bay leaves
1.2 kilos pork mask
2. Simmer Pork Mask
Blanched pork mask
2 pcs - bay leaves
2 tbsp - peppercorns
1/4 cup - garlic with peel
2 tbsp - salt
1 tsp - chicken powder
20 cups - water
350 grams - chicken liver
3. Slice Pork Mask grill sizes
4. Grill
1 tsp - cooking oil
1/2 of simmered pork mask
5. Deep Fry
3 cups - cooking oil
1/2 of simmered pork mask
1/2 of boiled chicken liver
6. Sisig Sauce
1/2 of boiled chicken liver
5 pcs - boiled garlic
1/2 cup - calamansi juice
2 tsp - ground pepper
2 tsp - sugar
3 tbsp - liquid seasoning
1/2 cup - vinegar
7. Combine
grilled pork mask
fried liver
1 to 2 cups - shallots
2 tbsp - green spicy chilis
2 tbsp - red spicy chilis
Sisig Sauce
1/2 of fried pork mask
Serve:
2 tbsp butter
Sisig
Top with: crispy fried pork mask, calamansi & spicy chilis
Serving: 6 people
