Ingredients to make about 30 cheese cutlets: 4 large potatoes 100 g Mozzarella Cheese 1 big onion Black pepper Salt Chili flakes To coat: 75 g all purpose flour 250 g breadcrumbs Salt Black pepper Directions: Peel potatoes and soak in cold water. Cut potatoes in big chunks. Boil potato chunks in salted water until fork tender. Slice mozzarella cheese and cut it in small cubes. Place mozzarella cubes over a kitchen paper and press one kitchen paper over to absorb water excess. Prepare the coating: Mix flour, salt and pepper with water and place in a bowl. Also place bread crumbs in another bowl. Prepare onion potato balls: drain boiled potatoes and mash them. In a pan cook potato, onion, chili flakes for 5 minutes. Meanwhile, mix this mixture until well combine. Add salt to taste. Use a tablespoon to take equal portions of potato mixture and form into balls. Make a hole in the centre of every ball and fill it with cubed mozzarella cheese. Coat each ball by dipping into flour mixture first, then roll into bread crumbs mix. Fill a large pot with vegetable oil and heat over medium heat. Deep fry potato balls until golden brown, for about 3 minutes. Drain the balls on a paper towel. Serve immediately with sauce.
