yum!! i tried the recipe tonight with my friend, subbed the buttercream frosting for cream cheese frosting and this cake was SO GOOD. super flavorful, nice soft texture with good spices mixed in. I think I could go with a handful of nuts in my next batch, but i'm definitely making it again!

It is not as easy as you make it look...spend most of my morning and afternoon making it, (although I am a novice...) You piping skills are excellent, especially in comparison to mine :) I am waiting for my birthday boy to try it. It looks gorgeous though, I am glad I did make this effort. Thank you!
I add shredded coconut and crushed pineapple and let me tell that’s the best carrot cake way then this version.. it’s the best recipe I learned in culinary school.. and it’s definitely a favorite of everyone I know..
Have you ever heard of Lady Baltimore cake? Its a bit of a pain to make, but its delicious. Its normally super fancy, with sugared flowers on it and everything, but there's a cute version made with cupcakes and mason jars that I think would be adorable with a Kawaii spin on it.
