I've been a chef all my life and your videos blow me away. we have a similar philosophy when it comes to good food. Everything about your channel is awesome. Respects to you Guga.
You could have baked them and preserved the flavor a little more, then made a cheap and easy dipping sauce from whatever condiments you could dig up. There are other ways to improve even simple foods like that. You get no sympathy from me for being lazy. I spend hours on my meals if that's what it takes to make it the best it can be.
Do you know I’m going to try to make all these recipes as I can. But considering my chronic back pain and broken foot, it’s going to be a challenge. But I’ll try to do the best I can to make sure that my family can enjoy the same things that you could for yours as I can do for mine. I just feel humbled looking at Guga’s foods, that I have the ability to see my family smile, as I use or feel as I was a child. Your cooking has not only again humbled me, but want to try to make an attempt at giving love thorough food. As hard as it is for me to just try making American Southern Mexican food, you are on another level. And if I can try to replicate this recipe, I’ll be thankful I think you just kind of the joy to my family. Tried this recipe - it looks amazing - and I failed miserably. I didn't add enough flour in the dough phase and it all fell apart before I could deep-fry. I will definitely be trying again! Are your measurements based on TWO of these?
It’s basically a choux paste. A good rule of thumb is that there should be a light film (provided that you’re not using a nonstick) and it should make a wet, slapping noise when you shake the pan.
