One of my favourite things about this series is how great the powers are. Like, in this instance you wouldn't expect a fishing rod or the ability to create zippers to be all that cool or interesting yet Araki found a way.

Not quite. He stopped the train to check on Prosciutto. Of course Bucciarati being put back together was more or less luck but so was the train moving his parts farther away from him.
I kinda feel like it's more representing him not entirely being self-confident. He lost patience in the end, albeit not as quickly as before these events, and him panicking at the end and stopping the train to check on his brother and "jump at shadows" represents that. Even in the final showdown, while he does have resolve like diamond, he only just gained it after having been fragile and reliant upon his brother for direction. If he'd gotten it longer before these events and had fully developed his own abilities and confidence, he'd be a truly fearsome stand user I think. But he didn't anticipate Buccialati out-smarting him and breaking his neck, so he fell to being scum after his expectations broke.

It's nice that they didn't mention that the blood circulation is making bruno die slowly because if they did it would make the zipper damage inconsistent. That means that the zippers won't cut the blood pumping through the person (zucchero), and only when a heart is zipped in half does it do that.
For what was shown, Bruno can decide when he wants his zippers to extend beyond a limit and thus make the opponent bleed (which could be an insta kill if he makes a clean zipper in your neck, just like it almost happened to Prosciutto), and other times he uses his zipper normally. In this case it's hard to tell, because if he's not literally cutting the heart in half, then why would it stop But we've seen that if Bruno completely detaches a part of his body without at least a strand of zipper being together with it, then that part stops being "connected" to that person; their blood circulation might still be pumping, but the nerves aren't connected, or you could say it's no longer a "functioning" body part, and that's consistent during all of part 5: He zips his body, he can only move the arm that's connected to his brain, and zips the heart makes it stop because it's no longer a "functioning heart". In episode two all of this properties are shown: he steals another person's arm, and can use it, as it's now a "functional arm", then he zips giorno in many parts and he has difficulty moving, but then he forcefully opens the zipper on his arm, cutting himself, but being able to leave a strand of zipper between his arm and his shoulder, so he can still call the stand on that arm, even after throwing it. A really interesting, well thought stand that people call inconsistent because they have a hard it figuring it out.
It is interesting, but it's not intuitive at all. It doesn't make sense that blood would pump through separated parts, but nerves wouldn't work, because it's nerves that make the heart's muscle contract as it does. It doesn't make sense that drug kid's arm would be considered separate, so gold experience's overload wouldn't work on Bucciarati, but Bucciarati would be able to move it as if it was still his at the same time. So is it both separate form Bucciarati (despite being visibly joined by a zipper) and functioning (despite it being connected to the kid's brain)? Then why couldn't Bucciaratti's heart halves be separate and functioning? The only way it can work is if bruno can't change functioning status of a thing affected by zipper once he's decided on it, but that would create another rule for his ability and that makes it less intuitive. If author doesn't say anything about those rules, like in databook or something, people assume that he just bent the ability a couple of times to make it cooler or to raise tension, and I think it's just as valid an interpretation as yours. Occam's razor. I think that it's both cool that we can talk about things like hidden rules for abilities, and great that we can praise Araki even for these moments, where he could still make us believe the scene's tension for a while despite it seeming like he didn't completely think the scene through. Hell, I only thought about how weird Bruno's ability was after a lot of rewatches, but if not for tension, I wouldn't rewatch this scene so many times. That's the beauty of it. If you want, we can talk about how Bruno opens his zipper into "pocket dimension" sometime, that seems like it has some hidden rules too.

When he thought that Bucciarati had escaped and was going to finish off Prosciutto, he tried to save his brother instead of using his sacrifice to finish off the rest of the gang and secure Trish, I.E. the mission. He then would then later realized that Bucciarati had self destructed trying to escape. Instead he stopped the train in a hopeless attempt to save his teammate, which gave Bucciarati the chance to recover.
