Here's my take. Modern & Massive has the most energetic/explosive ambience, the close mics captures a lot of resonance and sustain, suitable for rock/hard rock/metal, but no ideal for fast arrangements. Invasion has really clean and tailored close mics, the room mics are not as energetic, which makes it ideal for fast and dense songs. P IV has more round robins, velocity layers and a different flavor of ambience (more reverberant and bass heavy), it sits somewhere between M&M and Invasion, all arounder and versatile. The first two Halpern packs are good too but the sampling isn't very detailed.
I have Invasion and while it sounds killer out of the box I found it lacking in articulation and dynamic while playing with my Vdrums. I can’t get the Hi-hat to function smoothly on my TD-27, cymbal chokes are not supported (key after touch), articulation on snare is almost nonexistent (rim shots, flams) as well as the dynamic range of the samples. For midi grooves though it’s almost perfect.

Dumb question, but can you replace certain drums in a kit with different samples?
Yep, you can do that with all of the packs except their One Kit Wonder series.

Yes, I agree. ;-)
