Then after the yam has done it means the eggs is soft enough, you then use your finger to peel off the back while it still hot, just have a cold water to be dipping your hands while you peel so you don't hurt your self. Because it's soft, after peeling you just use spoon or turning stick to march it to your required smoothness, no need for blender. I also boil the green pepper ,. Same pepper we use for fried rice, with the yam, but you can blend or slice that one. I cook mine with groundnut oil, really delicious. The only reason why garden egg sauce will be bitter is because you didn't peel the back. I am an Edo woman and really love that sauce.

What usually gives the bitter taste aside not boiling the garden eggs is the garden eggs itself, it’s the type that causes the bitter taste

After mashing it, then I do the same frying process of tomatoes, then add the mashed aubergine and other ingredients. Mine is never bitter. If you try it this way, you will like it
