Blackberry Jam Cake Cakes & Icings Prep Time: 15 hr Cook Time: 40 hr INGREDIENTS 1 cup butter, room temperature 2 cups sugar 3 eggs 1 cup blackberry jam 1 cup apple butter ( John’s mom used applause) 2 cups buttermilk 3-1/2 cups flour 2 tsp cinnamon 1 tsp cloves 1 tsp allspice 2 tbsp cocoa powder 1/2 tsp salt 1 tbsp baking soda 1/3 cup raisins DESCRIPTION This recipe was made by Pastor John’s mom when he was growing up. It has great memories for him! DIRECTIONS Preheat oven to 350. Combine dry ingredients and set aside. In a large bowl, combine butter and sugar. Add eggs, jam and apple butter or applesauce. Alternately add buttermilk and dry ingredients. Stir in raisins. Bake in 3 qty 8“ greased and floured round pans. Bake for approximately 40 minutes. You can ice the cake with an icing of your choice. John’s mom used a caramel icing. You can used the icing also as filling or use extra blackberry jam as filling between the cake layers. Adding the jelly as an extra filling/glaze brings back memories of my grandma's jelly cake. She used Rex jelly for hers. I will definitely be making this cake. Cakes & Icings
