The exact same thing happened to me when I spatchcocked my second chicken to smoke on my Kamado Joe Jr. I’ve since invested in a good pair of poultry shears. The make a big difference.

But hopefully by the end of summer 2021 or fall maybe I will get my chance. In the meantime I need to start practicing this winter so I'll be checking out more of your vids. Been doing some minor comps around town and plan on entering my first ibca a little later this year. In this video you say you are leaving the bad side at home. Can you prep these chickens at home before the comp? I thought they have to be brought in the original packing to the comp and prepped there? Maybe it’s just your wording I’m hung up on. Awesome videos though, I’ve learned a lot! Thanks!!

Thanks for watching J! Yes, you are allowed to can prep at home. You can't do any marinating or seasoning but trimming at home is allowed. Good luck.

I do not Lu.na. In my opinion, it's better to keep that breast 100% intact to not lose moisture/juices.
