I wondered if pomelo zest could be used. I bought two very recently and they gave off such a marvelous citrus fragrance that only ripe fruit can produce. Hot water over candied peel in chilly weather tastes good, just as the peel in sparkling water, chilled, would make a wonderful warm summer evening party beverage.

In the Philippines, pomelo is eaten like one would a fruit picked ripe from a tree, no cooking necessary. Also as an ingredient in fresh green salad with walnuts and blanched shrimp, avocado, anything you fancy. Yumm.. The pith is bitter so prepping it like she does is needed.
