If its a filled room there good you don’t really need foam at all and natural echo is always good because it adds a level of realism onto the recording
Condenser would be better because it is more sensitive to sound than a dynamic, and would help bring the detail and color that you will want. Dynamics are more robust and can handle louder instruments at the cost of sensitivity/accuracy.
Did the video say it was a pro level tutorial? No. It was a 'how to get started' video. Perfect for what it was, and I thought the alto sounded quite natural and well balanced in the mix (eq/compression etc)

How about some brand and model names otherwise the whole vid is kind of pointless and not useful at all. For example does it have to be a MAC ?
