The three square gaps are duck twirls. You need to duck last second, jump and immediately twirl. They're pretty hard, but if you get the timing they can be consistent.

If you're wondering about those 1 block high, multi-block long jumps in that race level, to clear those quickly you have to approach with speed, jump late, and then twirl multiple times midair to preserve height :)
In SMB1, if you're on a wall of vines, you can mash right on the D-pad to go really fast. It's because you do small teleports when climbing horizontally in that mode instead of smooth climbing like the other modes.

if you want to do the three block jumps, the most consistent way is doing a crouch jump right at the end of the block (making sure you don't lose your speed crouching for too long) and spamming spin midair. You are right though, they aren't easy at all
It's really not the focus win or lose just having fun with the game itself lol plus I am technically surfing so it wouldn't feel right to be super hype about it
