    That looks awesome ! A quick stylistic tip - if you shock the broccoli in an ice water bath after par-cooking, it will retain more of its original color and texture. And yes, you are way too talented for P F Chang’s !

    • @thehungryhussey
      @thehungryhussey  5 лет назад

      Yes, you're right. I'll do that from a blanch. Most times, just a little time with mic, it still retains a lot.

    Hey Matt,
    I've seen a few different methods on preparing clarified butter, and most are more time consuming than is probably necessary for backyard griddling. I wonder if you'd like to do a short video on how you separate out your clarified butter and what you do with the leftover solids. Just an idea for ya. Thanks, bud! - Rob

    • @thehungryhussey
      @thehungryhussey  6 лет назад

      You know, I haven't thought about doing one for clarified butter, but you're now the second person that's asked today. I'm placing that on my list my friend. Clarified isn't as time consuming as ghee, but I prefer clarified over ghee, personally. Thanks for the recommendation pal!

    The sesame oil should be added to the sauce or drizzled at the end. It's not high heat stable, and will burn while you cook. It's a flavoring oil, even less stable than olive oil. Stick to the clarified butter or canola for cooking, then add sesame. Oils broken down can generate carcinogenic compounds. I don't have a blackstone yet but make a lot of Asian stir fry in my Lodge cast iron wok and use these methods.
