@@bambam6510 Really? I was bad about multi course meals. I aimed for at least 2 to 3 items. Soup and sandwiches. Chili and cornbread. I'd aim to add a salad or a veggie to a meat or casserole plus bread or another carb (potatoes, rice, quinoa, pasta).
Just saying for all those commenting on the corn meal, one must remember she still has little ones and they don't eat much. She actuallly had two leftover. So good job, Sarah❤

The comments about the corn are so funny to meXP I'm a very tiny human and still, most days I would be very hungry still after eating corn on the cob, while my husband is very content with just corn for dinner. Maybe he'll just eat more on the next meal, but his stomach wont scream in the meantime. I can't understand that but I don't think there's anything wrong about it!
I’m very much against food waste so I always try to be creative with leftovers! Way to go on reseasoning leftover bbq meat🙌🏼. I have done this many times! Everything looks delicious!😋

Yes to corn for dinner! Down here in the South summer is SO brutally hot that we honestly have days that we can't manage to eat much at the end of the day. BUT fresh sweet corn loaded up with some toppings is a go-to!
My Mexican in me with those thin homemade tortillas, they also look barely cooked but mybe it's juat the camera angle and i grew up on corn on the cob but i call them elotes❤

Not to mention her kids eat SO many fresh baked snacks throughout the day that she talks about all the time and she often makes a healthy dessert. Most people eat their heavier meals for lunch instead of dinner like in the US. It’s actually pretty common to have corn for dinner!
Last night for me was the day before payday fridge bare cupboard empty, but I managed to throw together tacos 100% from scratch, sometimes it’s more about how we plan ahead, and having a good base line, I buy my flour in bulk from Costco, so I know I always have something there… other things I always have in the pantry would be oats, sugar, baking supplies, sauces a well stocked spice draw, also keeping some things in the freezer helps, frozen veg, chicken, ect, the knowing of making from scratch truely helps, one of my other go to for when I don’t have a lot of food is gnocchi She made a meal with pasta and leftovers, and corn where I live can be pretty cheap I think she does amazing she also has a larger family

Nope, we Had a smaller corn field growing up and in Summer corn on the cob was a normal dinner. Just butter and salt added. Maybe with a bit of green beans as a side sometimes. And in winter it would be polenta. With bits of cheese in there. When the ingredients are eccellent you don't always Need many. No, we never were poor. We Always grew produce and protein tho.

I would suggest adding hot water to your corn tortillas and in my opinion it needed a lot more water.
