My buddy Scott Rose is a guide in South Florida and invited me out to target the mudfish aka bowfin. We spent the day fishing canals in the Florida Everglades and caugt a wide variety of species such as tiger oscar, peacock bass, largemouth bass, mayan cichlid, jaguar cichlid and our target species mudfish! Eh no hate man but in Canada, it's illegal to put an invasive species back in the waters you either kill it or call MNR, now that's probably not the case where you live but it is a good practice for conservation efforts and if you don't feel comfortable killing that many just call the ministry I'm sure they will thank you. I catch bowfin in lake Erie but never kept one . because everyone told me they were nasty eating nice catch
People that don't understand the concept could easily get the channel taken down if they feel that it's unethical or animal abuse or some other thing, so it's important to let them know to avoid reports
@@aaronswaimmarried7447 honestly the best fish and chips I ever had, was from a small mouth bass I caught.
Choupic(shoe-pick) has an enzyme that quickly deteriorate the meat when they die. Keeping them alive is key. After fileting, cut meat in bite size pieces and place in a 10-1 water-white vinegar ratio. This will essentially “kill” the enzyme and the meat will remain nice and firm.

@@iian_ it’s a really easy fish to keep alive, which is a must. Keeping fresh “bayou” water properly aerated or just change water occasionally in an ice chest usually does it easily. Even after fileting though, it’s imperative to cut the filet to your desired size and soak in the vinegar/water mixture with ice. How long? Idk exactly. Usually do this process first then after preparing everything else for frying…at least 45-60 minutes?? Really good but has a bad rap. Lol.
@@theshuttschateau4632 I'll give it a shot. It was actually a really clean white meat which surprised me. I did some Googleing and apparantly they can breathe air which helps in low oxygen waters. I can tell you one thing I won't be doing is try to lip them even with gloves. Those teeth came as a surprise to me. And fucking ouch lol
Been a land surveyor in FL for almost 20 years sub contracting for FWC and it’s CRAZY to see what the invasive species have done, along with improper water management. Insane to think now you can’t hardly find large mouth in the glades, but honestly killing or not killing the invasive species the war is lost they are here to stay! I remember taking to FWC biologist 10+ years ago and they knew it was over back then with the pythons and iguanas
Great job on explaining what cold temps do to the flesh of the fish and you were spot on with the way you prepared it after refrigeration. There are other ways to cook this fish but it’s basically taking it from the water, preparing it fresh and dropping it directly into the pan. Also, this fish has a scale layer, a skin layer and most importantly a fat layer. The most common prep of this fish is to fillet the scales but leave the skin thus protecting the fat layer. Properly stuffed with herbs and baked or cooked in a red sauce is the most common recipes in our area. Bowfin will absorb seasoning extremely well and I like to utilize elephant garlic when preparing it. Great video on your preparation!

You can put them on ice I do it all the time you just can't let them sit overnight Bowfin always will need to be clean immediately once you're home I've even fillet one and put it in the freezer it thawed out pretty well just wrapped the fillets individually in saran wrap the meat will stay firm if you know how to prep it but never let it soak in water and they are the best when deep fried after you fillet them
I wonder if it would be possible to soften the bones, as is done with sardines, to make them soft enough to eat?
Vic. If you take the bowfin and fillet it and cook it right away…you’ll be amazed by the texture and taste. Blackened on skillet, with some green chilies and green onions. Its the best tasting fish I’ve ever had honestly.
Just had it for the first time today, I blackened it on an outdoor fire, with some leaves in the butter. It was alroght although the internet says it’s bad, not too shabby for me 😅
Can I just say I love that you don’t think anything is a trash fish! I LIVE by that. We survived off mostly carp for like the first seven years of my life because we were poor. Occasionally blue gil, catfish, and trout but mostly carp! And it all started there, there is NO trash fish!!! Our ancestors THRIVED off the common carp!

Scott is the man! Had the absolute pleasure of fishing with him two years ago. He put myself, my FIL, and BIL on 100+ fish in 5 hours time. The gators were fun as well.
In Louisiana we call them choupique (shoe peck)... anyways, we fillet them and marinade them in regular mustard and then season them with Creole seasoning and garlic powder then deep fry them or you can make fish balls with them and side them with potatoe salad and crawfish stew.
Next time we hit Florida, I think we might need to get a guide like Scott. Such a great way to see wildlife. Airboats are junk.
We call them choupic. In fact, it’s more of a delicacy to us. It’s a regulated game fish in Louisiana. The meat does get soft when raw and rests, but firms perfectly after cooked.
The way we do in South Louisiana is we put it in a bowl of vinegar and water immediately after removing the filet. About a 1:3 ratio, maybe even 2:2. Just don’t have more vinegar than water, won’t damage it but remember, vinegar is acidic and it is technically in a pickling process which can cook it. You can even add a few cubes of ice to the mixture to keep it cool. This helps to firm the flesh. After it soaks for about 5-10 min you can take the filet out and freeze or fry. I keep it in the bowl until all my choupic has been cleaned.
If it’s killed after fishing and you let it set, the meat will turn soft. Next time you catch a choupic(bowfin) try this method and batter fry it as you would fry any normal fish filet.
It is depressing to see this filet turn mushy and end up in a cake 😭😭😭😭 I know all my bayou folks from back in Louisiana who are watching this are probably feeling the same way.
Remember VINEGAR AND WATER AFTER REMOVING THE FILET!
When done right and fried, I’d say they taste damn near as good as mahi

Love this, you wouldn't cook every animal the same way, or even every part of an animal the same way. You choose your cooking method/recipe, based on achieving the best taste for your main ingredient. You excel at this Vic, you adapt your cooking techniques on the fly, to bring out the best flavours. It is a skill you should be extremely proud of :)

Love eating them. We always tried to catch them out of colder water and eat them Fresh here in SE North Carolina. Straight from the fillet table to the pan or pot. We love them fried or in a stew. I know many folks that actually built large cinder block tanks in their backyard so they could keep them alive until ready to cook.
We are blessed they are still here these living fossils. We are actually looking at a primitive fish it's beautiful. I'm glad all the living fossils are here including sharks.
Met scott at one of the ramps a year or so ago, catch bowfin all the time down there from shore, my new addiction. Have caught a 9 pounder down there and caught many large ones, going to try this with a smaller one thanks vic!

We catch them on frog's or the Buzz Frogg which is a top water floating bait that the legs twist in circles as you crank it. They get huge here in Vermont. I know a friend of mine who is actively seeking the world record for mudfish, bowfin. They are an absolute blast to fish for... The old guys used to love making fish meatballs out of them, deep fried... I never tried them but head they are great cooked certain ways...

Western PA is lucky to have so many. As a kid I spent all my summers at a trib to french creek catching bowfin. What a way to grow up.
When younger, I ate them regularly. A friend's father would catch them. Scaled and cut into steaks the same day. Fried in cornmeal. Was very good.

When we get them on trotlines we make buffalo balls out of them…and give the rest to the barn cats because they do not keep in fridge. Super easy recipe:
2 lbs of bowfin
2/3 pkg of crushed ritz
1-2 eggs
1 packet of hidden valley ranch
1/4 cup finely chopped onion
Few cloves minced garlic
1/3 cup Franks buffalo sauce
1 egg
Salt and pepper to taste
Chop up the fish in small chunks, mix everything together, roll into ping pong sized balls. Pan fry until golden brown. Dip in blue cheese. It’s pretty dang tasty, but don’t try to eat them the day after. They’re soggy and get a funky smell.
Nice. And you stayed with the catch and cook. Love it!

Great explanation on trash fish and how to deal with them. As always great work highlighting these often thrown back fish. Growing up in south Louisiana we caught these as by catch on shiners as kids. We made fish cakes and fried them fresh. Flavor is decent but they do get mushy fast.

I remember as a kid hooking into a Cypress.. I was on a long crappie ultra light with 6lb .. I thought I had a white shark on the way I had to play it with my setup. What an absolute blast that fight was!!!

They call the jaguar cichlids "bay snook" in Mexico and Belize. They are tasty.
Those fish are super cool, I've caught them while they are spawning and the mouth and gill area turns a dark-Turquois blue color. They look like they are painted. Very hard fighters, very mean. Nice vid.

Really unique fish. I've caught a handful of them and the males during breeding season have a bright green to their mouth and ventral fins. Fun to catch and put up a good fight.

Bro my first and only mudfish was when I was panfishing with a tiny hook and my hook got straitened and I netted it with the line lassoed around it. They’re such strong fish!!

Another thing you can do with bowfin is smoke it.
We catch them on the pearl River in Mississippi. Keep them alive . Using an electric knife, fillet the fish. Take paper towels and dry the fish off. Place in a bowl layered with paper towels. Fish cut into slices like fish nuggets. Layer of fish...
Paper towels. Take out of bowl, meal and fry. Will keep in refrigerator 4 or 5 days. Best fish in the river to eat.

Pro tip on cooking grenel aka bowfin. Numer 1 dont wash the meat
Number 2 dont kill the fish before cleaning
Number 3 dont ger it cold
Keep it live and dry and its amazing
I personally love bowfin creek side fresh out of the water fried it stays ferm that way but I will say seeing those fish cakes definitely will have to try it

Getting the fillet wet (washing it off) hastens the break down/mushiness. It is best to just wipe it down best you can. If you need to rinse it off, cook it asap. They are best cooked minutes after cleaning.

Just a tip for prepping fish, bleed them. Take a knive and slit the Gill rakers. It makes the meat less bloody and messy and easier to cut.
I love freshwater fish and I also don't believe in the sayings "trash fish" or "dirty fish". Alot if people here in Ireland have the same belief with pike, trigger fish, garfish and sea cats which are all delicious
