Two reasons, ultimate is a latin word so the correct sound grouping is the 'tee' of 'ulti' rather than the 'tuh' of ult. Kind of like if we shortened 'diaphragm' to 'diap' not 'diaph'. Additionally it is easier to make the continuing 'ee' sound of 'ulti' than the stopping 't' at the end of 'ult', so a bit of slackness.
