Here's a laugh for you and your students... I have studyed martial arts since 1973' and I demonstrated the Kantana at our demonstrations. I played baseball from time to time. Once about 15 years ago I was looking at some baseball bats and realized that I was holding it as a right handed batter. My practice of the Kantana turned me into a right handed batter, I am left handed. 😀

Keep in mind these beginners sets teach different lessons while at the same time conditioning the body. They aren't really an actual combative "situation " Also nobody in their right mind would stick that leg out that far in front of an opponent. So...why do we practice it...
Yes they can. An opponent can usually hit your legs if they wanted too. But it would go at the expense of their head, which you'll cut in turn. Basically by threatening them from above you're not permitting them to attack your legs.
