Years ago, my stepdad was managing a cafe. A waitress called in sick. After getting a regular customer to "spy" for him, he camped outside her favorite bar. Fired her when she came out. She was known to call out just because she didn't want to work that day. Always meant someone had to work a double (16 hour) shift.
Boat charter story: Definitely the wrong type of people to try to pull a fast one on. They've seen and heard it all and WILL call your bluff, leaving you standing with your thumb up your ****! NEVER tell a cook/chef that he can't make super spicy food. You will regret doing so. Yes, employees can and do abuse calling in sick. But various managers always thinking they're lying are wrong just as often. It's especially foolish in a food service scenario. It's a lose, lose situation.
