EV'ing a classic car for me depends on what condition the base car is, just as much as what the car is. If you have a mint car or one that works perfectly fine, then in no way should it be ev converted. But, if its a complete restoration, then ev'ing it could be an option. Where ev'ing is kind of ok is where the engine is broken and parts are either not available or just financially ruinous.
Some EV conversions are equivalent to taking out the movement from a Patek watch and putting in a cheap quartz.
