I am maining Power Virtuoso (dagger-sword/GS), because I like it visually. Should I change my mindset and move to condi builds? Are there big differences between power and condi, in terms of damage output?
You don't need to change to condi builds if you prefer power. You can also play power chronomancer, which is lots of fun in insyanced content and open world AND gives you the option to provide alacrity or quickness on the fly :) I have a build for that on my channel/wiki too
In this game, there are fights that favor condi build and fights favor power build. So ideally you prepare two builds and swap on occasions. Condition damage is more steady while power damage in more bursty. So for fights with a lot of phases(e.g. most fractals, mai trin strike), you want to go with power build. For fights that have mechanics and pressure that doesn't let you do burst rotation properly, you go with condi build.
Thanks for the guide! I was looking to better maximize the damage output of my virtuoso without infusions. However, I'm quite confused with the stats of this build, as you specify needing to reach 23% condition duration without any boons in the hero panel. With your recommended gear setup while using the Dueling trait line, you are only reaching 18% condition duration in the hero panel. Should I be swapping out something for another piece of Viper or is this intended?

Using expertise + condi food or vice versa doesn't really matter much.
