Pit Boss Pro Series Combo Assembly - Part 1

- Pit Boss has just released the new Pit Boss Pro Series line and has made what we have all been waiting for. They have a pellet smoker and grill, combined with a gas grill and a gas side burner. The thought here is that it will allow you to smoke food or sear it using their "open to the burn pot" slides. Also, you get a three burner gas grill on the right with the same height capacity as the smoker AND the ability to open a smoke chamber, allowing smoke to go into that portion if you want. A side burner that can also double as a second working surface adds to the benefits of this grill.
That said, the grill is massive, and you have to put it together yourself. The directions are pretty good, but there are a few things to avoid and a couple of places where the instructions were not quite right. This video (2 parts) shows how to assemble the grill, things to watch out for, and will hopefully save you some lost time due to errors or confusing directions.
Pit Boss does also have the KC Combo Premium unit that has a gas grill/griddle on one side; however, I chose this one due to allowing the smoke to travel between the chambers. I don't have both units, so I can't do a side by side comparison, but I do like the controller and probe connections better on the KC Combo. I prefer the height advantages, however, with the one we purchased and also appreciate the side burner which the KC Combo does not have.
Since making this video, we have found some great resources that we wanted to share with you as well. These products work well with the PitBoss Pro Series combo, and I am fairly certain would work with any other pellet smoker as well.

Those screws were the reason it took me 3 weeks to complete. I kept trying to get those screws in, swear very loudly and leave it for another few days before trying again.
I would have done the same but wanted to get to smoking :).

THANK YOU! The grill has evolved a bit in 4 years, but your videos are still the most helpful thing going. Papa and I got it unpacked and assembled in about 2 hours, but without your videos, I am sure we would still be out there like monkeys with a football. The directions are almost useless. @SVDreamChaser for the win.
That is awesome. I am glad they helped. In 4 years i have had a few things break (er um, I broke them) but have videos on repairs too of you ever make tue same mistakes i have made over the years.

Some great build tips, I've just built the UK version Pit Boss Navigator 1230CN Combo Pellet Gas BBQ Grill I made double sure about getting the legs the right way around thanks for the tips really helped. It's currently running it's burn in cycle for 40 mins, my son is super excited and helped me build it. As it's getting late in the UK were just going to simply put on 2 steaks on the smoke side and give them a quick Cook. Can't wait, I'll hopefully dust off my video camera and do a video once I've perfected something. Keep those brilliant videos rolling, have a great day guys. Leon from England.

I just bought one, and am using it for the first time cooking ribs. I cannot figure out how to increase the smoke production. I've checked the auger, it works fine. Why am I only getting a minimal amount of smoke? You are right, there are still no problem solving or instructional videos for this series what so ever. Please help me.
I used magnets to block the vent holes (all but 1) but even without that it imparts quite a bit of smoke. You kind of get smoke on intervals just for a few minutes after the auger runs. But it is plenty of smoke to form smoke rings on brisket and ribs.

Obviously you're in Florida but I have no clue how you did this without shoes on. Maybe I am just paranoid of losing my toes.
Lots of time spent on boats and living where it is warm. Funny story, my feet used to be so tender, i started doing my morning walks without shoes around town to get them used to walking on pebbles and what not. Lol
I'm trying to decide on a grill to purchase. The Holland gas grill I've used for the past 20+ years has been great but I believe it's time to replace the worn out grill. I do like the convenience of a gas grill as well as the idea of smoking with the pellet grill. Your grill looks like it will fill both of my wants. Can you answer a few questions for me? What is the total width from left to right of your grill? How large is the cooking area in each side? They look small but I see you use the upper rack when cooking often. Do you ever wish you had more cooking area? Thank you so much for the time and energy you put into creating these wonderful and informative videos. Keep it up!
I was worried about the size before I bought it but it has not been an issue at all and I have never been in a position where I wish it were bigger. I am not doing 3 briskets at a time and if you wanted to cool more that 2 briskets or 6 racks of ribs then yes the size may be an issue. Each cooking side is about 21 inches wide by 22 inches deep front to back. I do cook on the upper rack to avoid any hot spots of cooking on the lower rack at higher temperatures on delicate food. For example I do fish or chicken up top but do brisket, port and ribs and burgers on the bottom rack.
Just got the Walmart Version a lil different than this the Charleston Im excited to open it but the wife will not allow it till i get the deck cleaned!!! Guess what im doing this week lol

I wish I watched these videos before assembling mine. I fell into the leg trap and have to dissemble mine and put the legs in the right configuration.

Yes it came with two meat probes and both can be plugged in at the same time to check either two different meats or two locations in one price of meat.

It is 63 inches left to right (width) when fully assembled.
wow...was $649 3 years ago, i just bought it for $849 ...waited 3 years too long, cost me $200 😒
Yes. They have certainly gone up. They do have a better controller now but not sure that is a $200 difference. The cost of the growing inflation :(
my 2 braces wont fit between the legs -_-
Please review the direction of the leg assembly. The braces should fit between them with minimal pushing and pulling.

This grill sucks to put together. Directions are a disaster. It’s like a 3rd grader wrote them. 3 hours later and it’s finally finished.
This was precisely why I thought the video would be helpful. I think we suffered from some changes in what is pre-assembled changing because the instructions didn’t match the current state of my parts. I also found that the first time I cleaned mine several screws had come loose so plan on tightening them up over time. Please give the video a like if you found it useful. That lets youtube know it is worth suggesting to others.
Thank you for the video! It did really help, especially at the leg part. I just thought there were unnecessary things such as the bucket inside the hopper, unscrewing the side burner, etc. it was just one thing after another!!
