    Pag napakuluan na at lumambot na - puncture the surface repetitively using fork. Tusuk tusukin lang ng mdami. This lets out air and water trapped in the meat. This will allow the under skin to achieve constant and same crispness as the outsude. Then using strainer let it cool and DRY for an hour or more before putting it in the ref for overnight. You fry the next day only after a couple of minutes taking it out from the ref. Been doing it for 25 years and never fails me. :)

    I just subscribed today since I already forget most of our country’s dishes. As a foreign spouse I am required to adapt Korean culture after marriage as per my byanan but thank God di na ko nakatira sa bahay nya so I can cook Filipino dishes again.^^ Thanks for this recipe will make this for new year’s eve with my husband.     Sinundan ko po ito masarap po. Nagluto din po ako ng bersyon ko na may twist masarap po naman sa bagonkong sawsawan ang 7-up at pipino.

    Naalala ko nung naging cook po ako sa mayamang pamilya sa mckinly hills,tulala talaga si sir bakit sobrang sarap daw ang niluto kong crispy pata?tinanong niya ako kung paano ko raw niluto? Simply lang ang sagut ko " ginaya ko po ang panlasang pinoy" Ang sagut naman niya ha? Nako kaaway ko yan! Ang sagut ko haha malay ko kung may sariling website kayo sir katulad sa panlasang pinoy.ako pala si Ederlina Bueno nakinood lang po.Maraming salamat panlasang pinoy dahil sa inyo natutu po akong magluto.

    Thank you so much for all your cooking tips, Vanjo. My question is: how about cooking crispy pata on the now popular air fryer? I just bourght a 10-quart Brio air fryer just so I can make crispy pata without the messy oil frying. Please comment.

    Mas malasa po talaga kapag knorr liquid seasoning ang gagamitin.. Kaya paborito ko po yan at halos lahat ng niluluto ko na ulam ay nilalagyan ko po ng knorr liquid seasoning.. 👌

      kung kinabukasan p nmn po kakainin ilagay n lng po muna sa freezer after pakuluan pra mas compress ung lasa ng nilagay sa pinagkuluan ng karne ganun ginagawa ko, frozen ko sinasalang sa mainit n mantika, tinutusok tusok ko muna bgo lagay sa freezer

    Hi po, medium heat lang po ba sa first frying and high heat sa second frying? Dnt have thermometer po kasi to check the temp of the oil for frying.

    I ussually put it in a freezer after boiling process. It gives a pata more crunchier when you fry it!

    Yun bang pata na nilubog sa 320 F cooking oil is the one that was rubbed with liquid seasoning or a different pata rubbed with just salt? Iba kasi ang color kapag na-fry na kung may liquid seasoning yung pata? And don't you need to put salt when boiling it for much tastier inside ?
