Newly married here.. Sa panlasang pinoy ako natutong magluto (still learning though :D) ... Not so complicated Filipino recipes para sa mga baguhan.. Will try this crispy pata.. Thanks a lot po..
Pag napakuluan na at lumambot na - puncture the surface repetitively using fork. Tusuk tusukin lang ng mdami. This lets out air and water trapped in the meat. This will allow the under skin to achieve constant and same crispness as the outsude. Then using strainer let it cool and DRY for an hour or more before putting it in the ref for overnight. You fry the next day only after a couple of minutes taking it out from the ref. Been doing it for 25 years and never fails me. :)

As a foreign spouse I am required to adapt Korean culture after marriage as per my byanan but thank God di na ko nakatira sa bahay nya so I can cook Filipino dishes again.^^ Thanks for this recipe will make this for new year’s eve with my husband. Yun bang pata na nilubog sa 320 F cooking oil is the one that was rubbed with liquid seasoning or a different pata rubbed with just salt? Iba kasi ang color kapag na-fry na kung may liquid seasoning yung pata? And don't you need to put salt when boiling it for much tastier inside ?

I do it that way too...the oil should be pre-heated.

Sinundan ko po ito masarap po. Nagluto din po ako ng bersyon ko na may twist masarap po naman sa bagonkong sawsawan ang 7-up at pipino.

Hi po, medium heat lang po ba sa first frying and high heat sa second frying? Dnt have thermometer po kasi to check the temp of the oil for frying.
I ussually put it in a freezer after boiling process. It gives a pata more crunchier when you fry it!
