I hv Grown up in Arunachal Pradesh India and we celebrate loser festival in which khapse is prepared. Now I hv moved out of the state however , I still prepare khapse at home. We use maida and i probably dont think atta .. but u try once
If we make khapsay with maida and mix milk w/suger and oil water to make dou will the khapsay become soft and stay fresh for long I mean for month.

yes. we can keep for one month but if your country is too hot, then i am not sure.. at Tibet we used to keep months due to cold weather.

In khapse mostly using sugar.i never use before but if you want to use you can add little in warm water and mix it, make a dough.
