After the oatmeal is cooked, you put a lid on, off the fire and leave it for 3 minutes. Thàt's the way to make oatmeal porridge. Makes it thicker. Also: add some cinnamon at the end! Delish.
You don't need to put so much oil in the pan Janni, and a friendly advice, add some nuts like almonds or whatever. Better nutrition and tastier. (Regarding the first meal)
The banana pancakes are also a go-to-recipe of mine. But to ensure that they turn out fluffy and not flat and with dry bits of oats, I usually let the batter sit on the countertop for approx. 20 minutes. This lets the oats soak up the watery stuff and gets more moist. Please, continue the cooking shows! :D

Good job Janni!! p.s. you should blend the banana with the oats first and then add a bit coconut milk, because it might would have been perfect without it! also, the oil was too much that's why it didnt form into a pancake properly!
