Yes comfrey is edible if dried and put into capsules used for different health problems but must be taken with A LOT of Water. Its best use is for helping to knit broken bones and bruises. My hubby had chipped his shin bone so I put comfrey poultices on his leg twice a day for 5 or 6 days and it healed very nicely and fast. So yes it is a great heath benefit for you as well as yard and animals.

If you have a large enough stand of comfrey, can you dry it in the summer/fall to serve all winter & spring?
Also, I'm growing Sunchokes & Canna edulis as year-round feed for my chickens & goats bcz they can eat the leaves and Tubers of both. Sunchokes leaves are 40% protein!! Canna edulis leaves are 10% protein. We're going to start new goat/horse bedding/manure compost piles in the chicken yard so they can harvest extra worms & bugs & compost the pile faster for us.
I want to learn to grow/find 75-100%+ of our chicken feed/grit/calcium.
