Loving the choice for more authentic cheddar as a British person when everyone I know in the UK uses American style singles in burgers
American singles melt better and give the classic flavor profile of a traditional cheeseburger. Cheddar is good too but it's a Cheddar burger, not a classic cheeseburger if you use that.
