You know what's the awesome thing? His surname is Kamiya, and if I'm not mistaken, 'kami' means paper in Japanese. :)
Kami also means "god". A fitting name for the GOD of origami.
the kanji in his name is the one used for god, not for paper. (kami can also mean hair, welcome to japanese)

Make your own double tissue, i made this model from 70x70 double tissue and it works fine

he uses large square sheet cause you have to.... it would be impossible to shape the head with 30 cm paper. having large paper doesnt factor its difficulty
