Maybe some examples of what's worth paying more for, what turned out to suck or be a waste of money? For someone like me who's looking at setting up a workspace it would be super helpful.

Didnt you get problems with the O2 while using it? I made a knife once from O2 and it got some ugly blue and yellow discoloration from something I cut it. Probably reacted with something in the food I was cutting.
It's a differential hardening technique so the edge is harder than the spine. It was traditionally used on "samurai swords" and usually produces a visual effect (hamon) on the blade as well.

Hey just a question, have you ever tried an s grind on any of your blade projects? It helps with the surface tension of whatever you are cutting.
