The water behaviour is not new I think. It's just that the rest of the old water that hasn't dissapeared yet combined with the new water flowing down and when that happens the old water will stay.
And I burned my pancakes writing this :(

Ah yeah, that makes sense with the water, I'd just never seen it behave like that

That amount of clay is normal on lush caves.
