Grew up in Western KY. We had boiled custard at T-giving and Christmas. My Grandmother and mother both made it. It was made to be drinkable or spoonable. Mother used half heavy whipping cream to help avoid boiling and to make it richer. One of the "coming of age" moments was that when you reached 15 years old you got to flavor it with the Old Granddad Whiskey rather than just vanilla flavoring at the table. Many warm comfy memories associated with boiled custard.

I just made a boiled custard for the first time today before watching this video. But I've seen shows that talk about how to add eggs to hot milk for both custard and Gelato. They're always very specific and careful. She barely whisked those eggs and poured them straight into hot milk without stirring at the same time. How was it not lumpy?

whenever i try to make boiled custard, it tastes good but it never has the creamy thick texture i want. Instead, it's kind of spongy and/or foamy....what am i doing wrong to cause this?
